From the 14th of March to the 7th of April 2024, the “Sajian Darul Ehsan” Ramadhan Buffet at Warna, the All-Day Dining restaurant at Mercure Kuala Lumpur Glenmarie, promises an immersive experience into the heart and soul of Selangor’s rich flavours. Crafted by the ingenious Executive Chef Zaharullail Ashari, affectionately known as Chef Awie, this buffet is not just a feast but a captivating story unfolding on your plate.
From 6:30 pm to 10:30 pm, families and friends are welcomed to indulge in the artistry of Chef Awie’s culinary narrative. Each dish is more than just an ensemble of flavours; it’s a chapter in Chef Awie’s personal journey, a journey fuelled by a profound love for creating unforgettable moments. “Sajian Darul Ehsan is not just a buffet; it is a story,” Chef Awie shares. The resilience of Sambal Taun, symbolising the ability to thrive in the face of intensity, and the cultural embrace of Nasi Ambeng, echoing togetherness and authenticity, each item unfolds a chapter of dedication to crafting moments that resonate with the true essence of family.

The theme of “Sajian Darul Ehsan” holds a special place in Chef Awie’s heart, inspired by the diverse culinary tapestry of Selangor. “Darul Ehsan, meaning ‘Abode of Sincerity,’ is a tribute to the land and its people,” Chef Awie explains. Each dish encapsulates the cultural heritage, flavours, and stories of Selangor, creating a symbolic journey on every plate.
Signature Dishes: A Culinary Symphony
Chef Awie invites guests to experience his gastronomic symphony a harmonious blend of local and Western flavours with 6 of his favourite signature dishes :
1. Kambing Salai and Ayam Bakar Perchik: A captivating blend paying homage to local roots while embracing global influences. Savour the smoky flavours of whole roasted lamb and roasted chicken, infused with a blend of local and Western spices, sourced from the district of Hulu Langat.
2. Wadai Kipeng (Our Editor’s Favourite!): A sweet embodiment of Chef Awie’s Banjarese heritage in Sabak Bernam, offering a delightful journey through time and diverse culinary landscapes. Similar to Puteri Mandi, this hot dessert features dumplings made from glutinous rice flour boiled until they float, served with a sweet coconut milk and palm sugar gravy infused with pandan leaves.
3. Ikan Purbakala: Chef Awie introduces this dish as a reflection of his personal journey, a transformative process mirroring life’s challenges to triumphs. As he passionately describes it, “Creating Ikan Purbakala isn’t just about cooking; it’s a journey that echoes the satisfaction of construction.” In this dish, seabass is infused with 27 local herbs and spices, stuffed, and deep-fried with beaten eggs to resemble an ancient-style fish.
4. Sambal Taun: In Selangor, Sambal Taun or Sambal Tahun is a Javanese heritage dish, prevalent in the Sabak Bernam district, including Sabak Bernam, Sungai Besar, Sekinchan, and Tanjong Karang. Similar to masak lemak cili api, Sambal Taun features galangal, kampung chili padi, and various proteins such as beef skin, cockle meat, beef tripe, or anchovies.
5. Nasi Ambeng: Recognised as one of Selangor’s heritage foods, Nasi Ambeng is a communal dining experience featuring white rice, fried noodles, soy-braised whole chicken or turmeric and lemongrass braised chicken, coconut and chicken floss, potato and herb dumplings, Javanese stir-fried beans, mixed bean curds with glass noodles, fried fermented soybeans, and salted fish.
6. Punten: A Selangor Javanese snack made from soft mashed cooked rice formed into rugby ball shapes, accompanied by spicy anchovies and green chili gravy (Sambal Hijau Ikan Bilis).
