Unlike the widely used palm olein, which is extracted from the reddish mesocarp (flesh) of the palm fruit, palm kernel oil is derived from the fruit’s inner whitish seed, known as the kernel. Through mechanical extraction and physical refining, without the use of caustic chemicals or additives, a pure, natural, and versatile cooking oil with a neutral taste and aroma is produced.
Palm kernel oil is classified as a lauric oil, sharing nearly 90% of its chemical and physical properties with coconut oil. It is particularly valued for its medium-chain triglycerides (MCTs), offering similar benefits at a fraction of the cost.
